Update on 100 Day Challenge

I am a third of the way through this 100 day whole food challenge, and I have really been enjoying all the food and recipes!  It makes it a lot easier, that's for sure!!  It has still been a huge challenge getting the kids to eat vegetables, which has been frustrating, but I suppose expected.  What has been even more frustrating is many times the kids complain about the food and whine about how they hate it...before even taking a bite!!  I think I need to blindfold them!!!

This has been a great experience for me, for a lot of reasons.  First, I really enjoy cooking, but never really did it much...so this is forcing me to do it!  Second, I am making a lot of things and trying a lot of food that I never would have attempted before, and I have had a lot of fun!  Next, I have always wanted to eat healthier as a family, and I am really doing it.  And finally, I have realize how amazing it is to have a meal plan ahead of time.  No matter what, I am definitely doing this from now on!

My first attempt at strawberry jam!  20 jars and hours and hours of work, and quite a bit of money since the recipe used honey instead of sugar, but all 20 jar sealed (even though I didn't use any canning tools) and it tastes great, so I am very happy!!!

People have asked me if I notice a difference...well, I don't know about the kids, but I have been sleeping soooooo much better and I feel less stressed (even though the past two weeks have been INCREDIBLY stressful).  I also feel like my skin is healthier...still not perfect, but way better.  It is hard for me to really notice things with the kids...I only see them on nights and weekends, plus I am not inside their little bodies to really know if they are feeling a difference.  But, I do think that even though Titus is still stubborn (I wonder who he gets that from - ha!), I don't feel he is as intense as before.

I am still struggling with my thyroid.  I went in for my annual physical and they did blood work and not only are my thyroid numbers super high, but my liver enzymes are high, my white blood cells are low, and my red blood cells are high.  There was something else, too, but I don't remember now.  My resting heart rate when I went in was over 100, even though my blood pressure was great, so they put my on a 24 hour monitor which came back as averaging 110 bpm during the day and it only got down to 79 when I was sleeping and even got up to 160 during the day - without exercising!  Obviously this is not good at all!!  One thing that is a factor is the fact that I am on what is called a "cleanse" for those of you into the natural stuff.  My body is working really hard right now on my thyroid and my adrenals, so I am sure that is why everything is so off.  But still, I knew my heart rate was elevated before I ever started my cleanse, so I think something is going on there.  Anyway, I am going to go on heart medicine for the next few weeks to get my heart rate down, and I am going take another blood test after I am done with my cleanse.  Hopefully the end result is that I am down into more normal ranges!

But I am still going to continue this 100 day challenge!  We still have a long way to go (the first week in September, after Labor Day), and I know it takes a long time to get all the junk out of your body.  But no matter what, I know that this is so much better for our health!

Way to go! Keep up the good work - for you and your family. If I ever run into magic about veggies and kids, I'll let you know. Until then, we're in the same boat, my friend.
